I am so excited to be part of the One New Food revolution with Kristen from Mommy in Sports, Lauren from Oh, Honestly and Herchel from Gym.Craft.Laundry. One New Food is all about taking meal times back from our picky eaters by introducing at least one new food a month!
This month, we took on zucchini!
One of the ways that I like to tackle one new food, is by getting my kids involved in the recipe choosing and cooking process! I went through a couple of recipe ideas with my kids and they decided they wanted to make Leprechaun Bread! Basically, it’s zucchini bread with a Lemon Yogurt Glaze and it is absolutely delicious!
- 3 cups of flour
- 2 sugar
- 1 cup of vegetable oil
- 3 eggs
- 2 tsp vanilla
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp of salt
- 3 tsp of cinnamon
- 1 1/2 – 2 cups of grated zucchini
Grate the zucchini and whisk together the sugar, eggs, oil and vanilla. (pre-heat your oven to 325 degrees)
Add in the salt, baking soda, cinnamon and grated zucchini.
Mix in the flour and baking powder.
Taste your batter
Pour the batter into 2 greased loaf pans and then bake for 50 – 60 minutes or until you tester comes out clean. Allow your loaves to cool slightly while you make the glaze.
- 1/2 cup
- the zest of 1 lemon
- the juice of 1 lemon
- 1/3 cup of powdered sugar
Mix it together and you are ready to glaze!
