Food is comforting. Especially food that we grew up with, am I right? Let me take you back for a moment, to one of the first recipes I EVER posted! I called it, “Poor Man’s Lasagna” because, it was a cheaper and, somewhat, easier version of my mom’s lasagna. Please, be gentle! I know the pictures are terrible (old, old camera phone) and I wasn’t the blogger I am today back in 2012! Well, back to the present. I finally created an updated, quick ‘n’ easy version that I call, “Lazy Lasagna“!
This Lazy Lasagna looks and tastes like it took all day, but it only takes about 15 minutes of prep and 40 minutes in the oven!
Here is what you need:
Looking at the ingredients like this, may make it look more daunting or complicated than it really is. Trust me, I am all about minimal time and effort, when it comes to getting dinner on the table! I’ll walk you through the steps and you’ll see how quick ‘n’ easy this recipe truly is!
Step 1: Sauce and Meat
All you need is 24 ounces of your favorite spaghetti sauce. I like to use this Hunt’s Traditional, because it is nicely flavored without me having to cook it all day. However, you could also make you own! For the meat, I like to use pork sausage. Yes, like the breakfast sausage! It is perfectly flavored, not too spicy for delicate tongues or picky eaters, pretty lean and browns up pretty quick, with no additional seasoning necessary. (Feel free to use any meat you’d like or, no meat at all!)
Step 2: The Cheese Mix
I know a lot of people might scoff when they see the cottage cheese, but this is what I grew up on and, when I tried to switch to ricotta, my kids hated it! With that being said, a lot of people can’t even tell there is cottage cheese in this, once it is baked! The cheese mix is simple. It is a couple cups of cottage cheese (small curd), 1 large egg and seasonings. Mix them all together in a bowl and VOILA! the cheese mix!
Step 3: It is all about the layers!
First, pre-heat your oven to 350 degrees! Now, you are ready to layer your lazy lasagna. I like to use a 9×9 baking dish, but you could easily double the recipe and use a larger dish.
Start by coating the bottom of your baking dish with sauce. This will make sure your noodles don’t burn and your lasagna doesn’t stick to the bottom of your pan.
The next layer is uncooked noodles. Yup, you heard me! UNCOOKED! Minimal effort! Just a single layer. I like to break them to make them fit into the baking dish a little better.
On top of the noodles, spoon and spread out half of your cheese mix, try to make sure you go out to the edge.
Are you ready for this? Add more CHEESE! YES! I like to add 4 slices of American cheese. Why American cheese? Because it is one of the best melty cheeses and my kids love it! (Feel free to use whatever kind of cheese you prefer.)
The next layer I add is the meat! All of it! Yes, one delicious meaty layer!
After the meat, it is time for more sauce, more noodles, the rest of the cheese mix and, you guessed it, MORE CHEESE! I like to use provolone or mozzarella on this layer!
Place one last layer of noodles on top of this cheese layer and then, cover the top with the remainder of my sauce. It never hurts to sprinkle a little Parmesan on for good measure!
Slide it into the oven and bake it at 350 degree for about 40 minutes. When you pull it out, the top will be bubbly and golden! Allow it to sit for about 5 minutes while you throw together a simple salad or cut some fruit.
Bam! Dinner is on the table and everyone will think that you worked on it all day! Believe me, it tastes like you did!
This Lazy Lasagna recipe is easy to double, or even triple, and is a FANTASTIC freezer meal! Freezer Instructions: simply pull it out the morning you want to make it and then, bake it for about 40 minutes before dinner! Perfection!
- 1 pound pork sausage browned
- 24 ounces spaghetti sauce
- 2 cups cottage cheese small curd
- 1 large egg
- 4 slices American cheese
- 4 slices provolone cheese
- 1/2 box lasagna noodles uncooked
- 1/4 tsp Italian seasoning
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp sea salt
- 1/4 tsp black pepper
- grated Parmesan
Pre-heat oven to 350 degrees Fahrenheit.
Mix cottage cheese, egg and seasonings
Assemble layers: sauce, noodle, cheese mix, cheese slices, meat, sauce, noodle, cheese mix, cheese slices, noodle, sauce, Parmesan.
Bake at 350 degrees Fahrenheit for 40 minutes.
Rest for 5 minutes.
