These are simple to make, easy to adapt, super delicious and quite healthy!
Start with your beans!
I have used many different combinations, for this one I used pinto beans and refried beans. Put them both in a pan with a couple TBS of water, a little salt, a little black pepper and a TBS of chili powder. Mix them together and let them simmer.
Next, make your meat mixture. Start browning your meat. This recipe is made with a pound of 93% lean ground beef, but you can also use ground chicken, turkey, pork or use quinoa and make it a vegetarian version. While your meat is browning, get your spice mix ready.
My spice mix is 1 TBS of chili powder, 1/2 TBS of paprika, 1 TSP of cumin, 1 TSP of garlic powder, 1/2 TSP of black pepper and 1/2 TSP of salt. Then you add 1 TBS of cornstarch and combine it.
Once your meat is browned, add your spice mix and about 1/4 cup of water. Mix them together thoroughly and let the sauce thicken. It only takes a few minutes.
Now, you get to build your Mexi-Mountains. These are my standard, Go-To toppings, but feel free to use whatever you would like!
I also like to finish it off with a little feta cheese, a couple of sweet bell pepper slices, some sour cream and green onions!
You can eat it as is and it is filling, satisfying, lower in calories and high in protein! You can also add rice or serve it with chips if you would like! Served like this, this meal has 380 calories and almost 30 grams of protein!
