I am a big fan of Mexican style food. Tacos, Enchiritos, Quesadillas. Yes indeed, I love it all. Especially with a big glob of crema or sour cream on top! Well, I was trying to figure out how to use our one new food this month and I finally figured it out!
- 1/2 of a ripe Avocado
- 2 scallions (just the greens)
- the juice from 1/2 a lime
- 1 kale leaf (pull the greens off the stalk)
- 1/4 cup of sour cream
- 3 Tbs of ranch dressing
- a pinch of salt
- a pinch of black pepper
Throw it all in the blender.
Now, I mentioned that avocado was our One New Food. One New Food is the idea of taking mealtime back from our picky kids, one healthy food at a time. So, I have to admit, neither me nor my kids had previously tried avocado. We all tried it plain. The outcome was not great.
So please, give this avocado recipe a try because it is flat out tasty and also, think about trying out One New Food!
