I knew that I wanted to make it a little lighter than the restaurant version and luckily, I had just gotten a variety box of S&W Premium Beans to try! S&W Beans has the highest standards in the industry, delivering premium quality for over 120 years. I have always heard that Cannellini (or white beans) go great in Italian recipes, so I thought they would be the perfect replacement for all of those heavy potatoes!
Here is what I used to make this Zuppa Toscana recipe:
- 1 half of a small yellow onion (diced)
- 1 half pound of spicy Italian sausage
- 1 can of S&W Premium Cannellini Beans
- 4 stalks of fresh kale (leaves, chopped)
- 2 cups of chicken broth
- 1 cup of half & half
- salt and pepper
- garlic powder
- Italian Seasoning
Making this Zuppa Toscana is super simple and it cooks quite quick! Here is how you make it:
Step 1: Brown the meat with the diced onions.
Step 2: Once the meat is browned, add in your S&W Premium Cannellini Beans, 1/4 tsp of salt, 1/4 tsp of black pepper, 1/4 tsp of garlic powder and 1/2 tsp of dried Italian seasonings. Gently mix them together.
Step 3: Add your liquids. This is done in two parts. First, add you chicken broth and allow the pot to come back up to a boil, lower the heat to medium-low and let cook for 5 minutes. Once the time has passed, add your half & half.
Step 4: Add in your chopped kale, place a lid on the pot and allow to simmer for another 5-8 minutes.
You don’t want to over cook this soup. Your kale should soften, but not be completely limp!
Once it is done, serve it up hot with a little Parm on top and a delicious bread-stick on the side!

This soup reminds me of the zuppa they serve at Olive Garden. Homemade is always better. We love the beans and sometimes I use kale and sometime spinach. We enjoy both. Great for lunch or in evening on a chilly day.
