I love one pot meals. I also love simplicity and not having to rinse out a million dishes.
I am going to share my version of a Chicken Pot Pie.
One Pot Chicken and Biscuits.
Get out your favorite cast iron skillet, dutch oven or oven safe pan and gather your ingredients.
While your chicken sears, dice up your potatoes. I like to leave the skin on and just give them a good scrub, but you can peel them if you would like.
Once your chicken is seared on both sides, toss in your potatoes and poor in your chicken stock.
Give your pan a gentle shake and everything should settle. Sprinkle in a little more salt and pepper. It’s always important to layer seasonings.
Pop that bad boy into your preheated oven for 13-16 minutes, depending on your oven and the type of pan you are using. When the allotted time is up, this is what comes out!
