I was in need of some quick and easy for lunch. I looked into my fridge for a few minutes and then I saw my lunch salvation, pepperoni and cheese. Two ingredients that my children never turn down!
Now, I needed a vessel. White bread? No way! Make a crust? No time! English muffins? All out!
Open the bread drawer……
Ta-da! Tortillas! I know what to make for lunch!!!!!!!
Take out two 8in flour tortillas and brush one side of both tortillas with the oil.
Then, you layer. My layers are as follows:
More herbs and shredded cheese
Top with the second tortilla (oil side up) and then, gently, place into the preheated skillet.
