We have been so busy the past week or so. Birthday parties, chores, family cookouts and playing in the water. I am exhausted!
This is the life of the parent. Always tired and always on the go!
Today, I threw a chuck roast in my dutch oven and let it slow roast for 6 hours. There is nothing better than a meal that practically cooks itself!
Here are the ingredients:
I used a 3 pound chuck roast but you could use any piece of meat that can handle slow cooking. Beef, pork or chicken, your choice! Pour the entire can of chipotle in adobo over the top of you meat. Here is where it gets weird.
Pour in 1 can of pop. That’s right. Pop! Whatever kind you prefer. I have made it with coke, Dr. pepper and mt. dew. Tonight, I am using mt. dew. Just pour it into your pan.
Serve it on a bun with some cheese and some crisp romaine lettuce or serve it on it’s own with mashed potatoes! Either way it is delicious!
When you are a busy parent, just remember that it is ok to slow down and spend some quality time with your little one!
Tonight, I shared a giant bowl of popcorn and a movie with my boy. He is the owner of the adorably pudgy hand! Can anyone guess what we were watching?!

Serves 8 – 10
3 or more pounds of slow roasting meat
1 11oz can of Chipotle peppers in adobo
1 12oz can of pop
1 large onion
