Here is a recipe in honor of my mother’s vacation!
The ingredients are:
(Could it be any simpler? I think not!)
Place your thawed boneless skinless chicken breasts into your crock pot.
Mix together the BBQ sauce, soy sauce and pineapple juice together, pour over the chicken breasts.
Place a pineapple ring on top of each chicken breast.
Set your crock pot on high for 4 hours or on low for 6-8 hours. I put mine in at 1pm and serve it at 6pm. Just to give you an idea. I cook mine on high.
About an hour before serving, slice about 1/2 cup of baby carrots and sprinkle them on top. You want them to maintain some crunch.
Let it continue to cook until you are ready to serve.
You can serve this with mashed potatoes, a nice salad or some pasta. I like to serve mine with seasoned rice and broccoli!
Ta-Da! Yum! I like to finish mine by sprinkling the chicken and pineapple with a little salt, some cracked black pepper and a tiny bit of cayenne pepper for a little kick!

4 boneless skinless chicken breasts
1/2 cup of BBQ sauce
1 tbls of soy sauce
1 small can of pineapple rings
juice from pineapple rings
1/2 cup baby carrots
Turn your crock pot on. (Low setting takes 6-8 hours, High setting takes 4-5 hours)
Place boneless skinless chicken breasts in an even layer on bottom of crock pot.
Mix together BBQ sauce, soy sauce and pineapple juice, pour over chicken.
Place 1 pineapple ring on top of each breast.
Put on lid and let it cook.
1 hour before serving slice 1/2 cup of baby carrots and sprinkle on top.
Serve with a side of your choosing!
